A vital part of a wedding, it really would not be quite the same without it.  Steeped in tradition and a focal point of the reception décor, it is important that you choose your cake with about the same care as you choose your gown. 

Many modern brides actually match décor or certain style traits of their gown to the cake.

The cake is normally cut after the speeches, before dessert.Accepted protocol dictates that the bride cut the cake with the grooms’ hand resting over hers.  The slice is then shared / eaten together.  This is a symbol of enthusiasm to share a life together.

The bride and groom can, if they wish, serve their parents next, after which, anyone can slice the remainder of the cake for distribution to the guests.

Cake trends have changed.  Today’s modern couple’s are opting for more excitement in design and flavour, sumptuous fillings, attractive shapes and new procedures ... Literally works of art, infusing the personality and theme of the couple.
 

Popular new techniques include:

  • Lace pieces
  • Piped embroidery
  • Moulded flowers and leaves
  • Fresh flower ornaments
  • Flooding (technique for filling in outlined shapes with colour)
  • Hand painting
  • More colour ( a steer away from the traditional all white)
  • Theme designs, basket, stairway, hat shapes etc
 
 

While some couples still opt for the traditional plastic bride and groom to crown their cake, others are diversifying, opting to be more creative and adventurous, using it as an opportunity to express their character or ideas.
Some suggestions are:

  • Cascading fresh flowers
  • Transparent figures, bells and castles etc.
  • Rings on ring pillow
  • Fluted or scalloped shells for beach weddings
  • Harp
  • Grapes and vines
  • Fountains
  • Hand moulded sugar flowers as opposed to artificial
  • Crystallised flowers ( small flora or single petals of roses, preserved in caster sugar crystals) which last indefinitely)


TIP:

  • Try to develop an individual style of display so that your cake has its own unique feature.
  • After a year the cake really does not taste that good, instead of saving the top layer  request a lasting keepsake incorporated into the design, like  a horseshoe or a glass filled with crystallized flowers.
  • It is always best to display the cake on its own table with complimentary decorative surround

When ordering your cake professionally:

  • Ask if you can taste some samples
  • Make sure you get a full price list
  • Ask to see photos of previous work or a portfolio
  • Ask what decorations they are prepared to work with
  • Ask and verify time frames for work and completion, storage if necessary.
  • Choose carefully … There are different types of icing, Royal icing, Fondant etc
